Classic, silky, stylish.
Tasted bottle No.495 of 2,700.
This organic, vegan and regeneratively farmed Pinot Noir was harvested from Covert Farm's estate's Mimi Block (planted in 2009) and aged 21 months in French oak.
Beautifully woven, you can expect classic notes of sweet red cherry and vanilla, star anise, cedar chips, violets, raspberry, beets rolled in cocoa and fresh earth. It has a silky palate that is fresh and stylish. Red berries, earth and fine spice flavours mirror the nose. Expect good length with some grip on the finish and flavours of leather and tealeaf. Savoury notes of beet greens, wild herbs and rainforest floor are woven with sweet red current and cherries, baking spices and orange peel. It is silky and shows a classic Pinot earthy character along with bacon fat, fine spice and cocoa.
